Keto Meatballs with Satay Sauce

Recipe | Serves 4 | Prep 15 min | Cook 25 min

Keto meatballs simmered in Frenchies Keto Satay Sauce, served over cauliflower rice

Weeknight meatballs deserve a sauce with real character, and this one delivers it. Frenchies Keto Satay Sauce brings all the rich, nutty depth of a proper satay without the sugar most bottled versions rely on. Simmer the meatballs directly in the sauce and everything comes together in one pan, ready in well under 40 minutes.

Tip: Wet your hands slightly before rolling the meatballs. It stops the mixture sticking to your palms and gives you neater, more even shapes.

Ingredients

For the meatballs

  • 500g beef mince
  • ¼ cup almond flour
  • 1 egg
  • 2 garlic cloves, crushed
  • 1 tsp grated fresh ginger
  • 2 spring onions, finely sliced
  • Salt and pepper, to taste
  • 1 tbsp olive oil, for frying

For the sauce

Method

1

In a bowl, combine the beef mince, almond flour, egg, garlic, ginger, spring onion, salt, and pepper. Mix gently with your hands until just combined. Shape into 16 to 18 meatballs.

2

Heat the olive oil in a large pan over medium heat. Brown the meatballs on all sides, turning gently, about 6 to 8 minutes total. They do not need to be fully cooked through at this stage.

3

Pour in the Frenchies Keto Satay Sauce and water or stock, stirring gently to coat the meatballs.

4

Cover and simmer over low-medium heat for 12 to 15 minutes, until the meatballs are cooked through and the sauce has thickened slightly.

5

Serve over cauliflower rice, topped with fresh coriander and extra spring onion.

Storage tip: Keeps well in the fridge for up to 3 days. Also freezes well, meatballs and sauce together, for up to 2 months. Thaw overnight in the fridge before reheating gently on the stovetop.
